6large eggs | |
600g plain flour | |
1tbsp olive oil | |
1pinch salt |
Directions
1.
Place flour, eggs, oil and salt in the bowl of a stand mixer.

Using the flat beater, mix at speed two until well combined.

Switch to the dough hook and knead until the dough forms a ball and indents when you poke it.

Cover with a damp towel and let it sit for 20 minutes (it just took a beating, it needs time

Now's the fun part, use a pasta roller to get it as thick or thin as you like. If you have it use the pasta attachment to cut to your desired thickness… or grab a knife and go nuts (watch your fingers)
