Classic Roast Beef

Cook the perfect roast beef for Sunday lunch or a dinner party

Ingredients

1kg sirloin beef
5 shallots (or onions)
4whole garlic cloves
2 bay leaves
2tbsp olive oil
2pinches salt and pepper
For the Gravy
1tbsp plain flour
1/3cup white wine
100ml beef or veggie stock

Directions

1.

Preheat the oven to 180’c.

Season beef with salt, pepper and thyme. Add 1 tbs oil and rub into the beef.

Heat a large heavy based roasting tray over a medium high heat.
Mark as complete

Fry the beef on each side for about 4 minutes until nicely coloured.
Mark as complete

Add shallots, bay leaves and garlic to the roasting pan with the beef and place in the oven.

Cook for 45 minutes, basting the meat regularly.
Mark as complete

Once the meat is cooked, remove from oven, cover with foil and allow to rest for 10-15 minutes

While the meat is resting, place the roasting pan over medium low-heat, add the flour and wine. Mix for 1 minute then add the stock and simmer for about 3 minutes.
