Ingredients

2 sheets frozen puff pastry
1cup sugar
3/4cup cornflour
1/2cup custard powder
5cups milk
3tbsp butter
2 egg yolks
2tbsp vanilla essence

Directions

1.

Heat pastry until puffed. Line dish with foil.
Mark as complete

Flatten pastry and put in dish puffed side up. (may need to cut some off, depending on dish)

Combine sugar, cornflour and custard powder in saucepan. Mix well to combine.
Mark as complete

Blend with a little milk until smooth, stir in rest of the milk, add butter. Stir constantly over medium heat until custard boils and thickens. Reduce heat, simmer for 3 minutes.

Remove from heat, stir in vanilla quickly, then stir in egg yolks quickly. Pour hot custard immediately over pastry in dish.

Put remaining pastry (puff side face down) on top of custard and Ice. I put coconut on mine but you can do what you want.

Leave to cool. Refrigerate overnight. Enjoy
