Ingredients

400g beef mince
400g pork mince
1pinch salt and pepper
2tbsp olive oil
1large onion - diced
2large garlic cloves - crushed
1/2cup red wine Drink the rest
2tbsp tomato paste
750ml tomato passata
1packet favourite pasta
1bunch fresh basil - roughly chopped
1bunch fresh parsley - roughly chopped
15g grated parmesan to serve

Directions

1.

Place a large frying pan over medium heat. Add the oil and onion and cook slowly for about 4-5 minutes until onions soften. Add the garlic and cook for a further 2-3 minutes.

Add the mince, salt and pepper and brown for about 5 minutes.

Add the wine and allow to evaporate. to about 2/3rds of what it was

Make a well in the center of the mince and add the tomato paste. Cook the paste for 2 minutes in the well and then mix through the mince.

Add the tomato passata and reduce to a simmer. Allow to cook for at least 45 minutes.

When nearly ready, bring a large pot of salted water to the boil and cook the pasta according to the packet directions.

Once pasta is cooked, mix the herbs through the sauce. Add the pasta to the sauce, mix through and top with parmesan.
